This 0.57 ha. monopole is a walled vineyard, with vines planted in 1946, 1985 and 2000. The vineyard lies on a gentle slope facing southeast from an elevation of 290m, with deep clay-limestone soils over limestone bedrock.
Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
The grapes are manually destemmed and pneumatically pressed. The must is lightly settled, then fermented over ambient yeasts, with a total cuvaison of 2-3 weeks.
Aging:
Aged for 18 months in neutral oak barrels.
Bottling:
Neither fined nor filtered.
