Several mid-slope, southeast-facing parcels, aggregating 1.25 ha., planted in the 1970s over clay-limestone soil. This cuvée is made only in high-yield vintages with sufficient old vine fruit.
Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
Fully de-stemmed fruit is macerated for two weeks in tank and fermented over indigenous yeasts.
Aging:
Aged for 18 months in barrels (approx. 10% new oak); with one racking.
Bottling:
Neither fined nor filtered.
