Viticulture:
Biodynamic (certified Ecocert).
WineMaking:
Partially de-stemmed. Cold settling for one week at 15°C. 10-day fermentation over indigenous yeasts with punch-downs and pump-overs.
Aging:
Aged into new oak barrels. Then blended into tank for 2-3 months.
Bottling:
No fining, no filtering.
