His son, Camille, for whom the house is named, continued this legacy, cementing the family’s reputation for excellence in champagne production. Today, the fourth generation, represented by Hervé Savès, upholds the traditions while incorporating modern techniques to enhance the winemaking process.

Bouzy, a celebrated Grand Cru village in the Montagne de Reims, is particularly suited for growing Pinot Noir, which thrives in Bouzy and contributes to the rich, full-bodied character of Savès champagnes. The vineyards, covering approximately 10 hectares, benefit from the region’s chalky soils and favorable climate. The estate also cultivates Chardonnay, adding finesse and elegance to their blends.

WINEMAKING: The must is cold clarified before undergoing a first thermoregulated fermentation at 18°C. No malolactic conversion. Then vinified on lees for 7 months is bright annealed stainless-steel vats. Blend with 40% reserve wine before bottling.
AGING: Bottle-aged on lees for 3 to 4 years before disgorging.
BOTTLING: Dosage: 5 g/L. Disgorgement every quarter.

VITICULTURE: HVE certified.
WINEMAKING: The must in cold clarified before being run off into barrels for the first fermentation. No malolactic conversion. The wine is left undisturbed on lees for 7 months before being bottled. The final blend is predominantly Pinot Noir from the very best years only.
AGING: Bottle-aged on lees for minimum 36-48 months before disgorging.
