Virgile Lignier presides over Domaine Lignier-Michelot, a distinguished estate located in the heart of Morey-Saint-Denis within Burgundy’s prestigious Côte de Nuits. As the fourth-generation heir, Virgile manages this meticulously cultivated domaine, encompassing 12.5 hectares of vineyards primarily dedicated to Pinot Noir.
Founded on organic principles and guided by lunar cycles, Domaine Lignier exemplifies a commitment to organic viticulture. Virgile joined his father, Maurice, in 1998 and assumed full control in 2000.
Virgile’s winemaking philosophy mirrors Henri Jayer’s ethos, prioritizing the cultivation of pristine fruit to allow the wines to articulate their distinct origins faithfully. In the cellar, meticulous practices define the vinification process. Grapes undergo stringent selection followed by a brief, five-day cold maceration and fermentation using native yeasts. Notably, Virgile embraces whole-cluster fermentation, ranging from 30% to 100% based on vineyard and vintage conditions, enhancing the wines’ complexity and structural integrity.
Maturation occurs in French oak barrels, with new oak usage restrained to 20-30%, except for the Grands Crus which may see up to 100% new barrels, ensuring harmonious integration of oak nuances. Post-fermentation, the wines age on fine lees for about a year, fostering texture and depth, before bottling without fining to preserve their innate character and authenticity.
