Sylvain Pataille is among the most instrumental winemakers in Burgundy, celebrated not only for his sophisticated dedication to organic and biodynamic viticulture, but also for his leadership in bringing the Aligoté grape and the Marsannay appellation onto center stage. Born in Marsannay-la-Côte, his path to winemaking began early. Sylvain pursued formal education at the Lycée Viticole de Beaune, followed by advanced studies at the University of Bordeaux. Before founding his own domaine in 1999, Sylvain worked as a consulting oenologist sharing his expertise and helping to elevate their winemaking practices.

Domaine Sylvain Pataille, situated in Marsannay, the northernmost appellation in the Côte de Nuits, spans 15 hectares. The domaine’s holdings include Pinot Noir, Pinot Beurot, Chardonnay Blanc, Chardonnay Rose, and Aligoté Doré. Sylvain’s commitment to preserving the genetic diversity of his vines through massal selection has been instrumental in maintaining the resilience and unique character of his vineyards. His portfolio includes various cuvées, such as Marsannay Rouge, Marsannay Blanc, and several single-vineyard Aligotés, each reflecting the distinct terroirs of Marsannay.

Sylvain is a proponent of organic and biodynamic farming. His vineyards have been certified organic by Ecocert since 2008, and he has integrated biodynamic methods since 2007. His farming practices are meticulous, including plowing 4 to 5 hectares by horse, enhancing soil health and biodiversity. Sylvain’s dedication to these practices ensures that his vineyards thrive in a balanced and sustainable ecosystem.

In the cellar, Sylvain Pataille focuses on minimal intervention to highlight the natural expression of his terroirs. He utilizes indigenous yeasts for fermentation, employs whole-cluster fermentation for added complexity, and minimizes sulfur usage, adding only small amounts at bottling. Aging is conducted in a mix of new and old oak barrels, typically ranging from 12 to 18 months, though some wines may age longer based on their needs.
